Vincent Couche occupies a genuinely unusual position in the French wine world: his vineyards straddle the Aube department of Champagne and extend into Burgundy proper, allowing him to produce Champagne, Coteaux Champenois, Coteaux Bourguignons, and Bourgogne Blanc from a single farming operation rooted in biodynamic principles. Based in Buxeuil in the Côte des Bar, Couche converted his estate to biodynamics and has become one of the Aube's most celebrated voices for terroir-driven, low-intervention Champagne. His Eclipsia is a fresh, Chardonnay-led expression showcasing the limestone soils of the Aube, while the vintage Sensation wines—produced in tiny quantities and aged for many years on lees—represent some of the most compelling mature Champagnes available from a grower producer. The extended library of formats (3L, 6L) speaks to Couche's belief in wines built for time. His Ratafia, a mistelle made from Pinot Noir, offers a window into the Aube's centuries-old aperitif tradition.
